El Águila Verde — Mexico

Ingredients
- 1/2 English cucumber, roughly chopped
- 1 oz fresh lime juice
- 0.75 oz agave syrup
- 1 thin slice fresh jalapeño (seeds removed)
- 6 fresh mint leaves
- 3 oz sparkling water
- Ice cubes
- Cucumber ribbon and lime wheel, for garnish
Instructions
- Blend the cucumber chunks with lime juice and agave syrup until smooth.
- Strain through a fine mesh strainer into a shaker — press to extract all the green juice.
- Add the jalapeño slice and mint leaves to the shaker with ice. Shake for 10 seconds.
- Strain into a tall glass filled with fresh ice.
- Top with sparkling water and stir gently once.
- Garnish with a cucumber ribbon wrapped around the inside of the glass and a lime wheel.
- Serve immediately — the green color is most vivid when fresh.
