Seattle Emerald City Cooler
A vibrant green cucumber, green apple, and matcha mocktail inspired by Seattle's Pacific Northwest landscape. Ready in 10 minutes.

Ingredients
- 3 oz fresh cucumber juice (about 1/2 English cucumber, blended and strained)
- 2 oz green apple juice
- 0.5 oz fresh lime juice
- 0.5 oz honey syrup
- 1/4 tsp ceremonial grade matcha powder
- 3 oz sparkling water
- Ice cubes
- Cucumber ribbon and fresh mint sprig, for garnish
Instructions
- Whisk the matcha powder with 1 tablespoon of cold water until smooth and lump-free.
- In a shaker with ice, combine cucumber juice, green apple juice, lime juice, honey syrup, and the matcha mixture.
- Shake vigorously for 15 seconds — the matcha needs good agitation to incorporate.
- Strain into a tall Collins glass filled with ice.
- Top with sparkling water and stir gently once.
- For the cucumber ribbon: use a vegetable peeler to create a long, thin ribbon of cucumber. Curl it inside the glass.
- Add a fresh mint sprig and serve immediately.
- The color should be a vivid, bright green — if it looks dull, your matcha may be old.
