Sky High (US Air Force Mocktail)
A pale sky-blue butterfly pea flower mocktail with white cloud foam honoring the US Air Force. Elegant and ready in 10 minutes.

Ingredients
- 2 oz butterfly pea flower tea, cooled
- 1 oz fresh lemon juice
- 0.5 oz simple syrup
- 4 oz sparkling water
- 1 oz aquafaba (chickpea liquid) or 1 egg white, for foam
- Ice cubes
- Lemon twist and silver wing cocktail pick, for garnish
Instructions
- Brew butterfly pea flower tea and cool completely.
- In a shaker without ice, add the aquafaba (or egg white). Dry shake vigorously for 30 seconds to build foam.
- Add the butterfly pea flower tea, lemon juice, simple syrup, and ice. Shake for 15 seconds.
- Strain into a champagne flute.
- Top with sparkling water — the dilution will create the pale sky-blue color.
- Spoon the aquafaba foam gently on top to create the cloud effect.
- Garnish with a lemon twist and a silver wing pick.
