The Toronto Blue
A vivid electric-blue butterfly pea flower mocktail that color-shifts to purple with lemon — inspired by the Toronto Blue Jays.

Ingredients
- 4 oz butterfly pea flower tea (brewed and cooled)
- 1 oz white grape juice
- 0.5 oz simple syrup
- 1 oz sparkling water
- Salted rim (optional)
- Ice
- Lemon wheel, for garnish (and the color-shift magic)
Instructions
- Brew butterfly pea flower tea: steep 1 teaspoon of dried flowers (or 1 tea bag) in 6 oz of hot water for 5 minutes. Strain and cool completely.
- If using a salted rim, wet the rim of a rocks glass with a lemon wedge and dip in flaky sea salt.
- Fill the glass with ice.
- Combine the cooled butterfly pea tea, white grape juice, and simple syrup. Stir gently.
- Pour over ice. The drink will be a vivid electric blue.
- Top with sparkling water.
- Garnish with a lemon wheel. Serve with the instruction to squeeze the lemon in — and watch the magic happen.
