Stargazer's Fizz mocktail — blue-to-purple color-changing drink with passion fruit in a tall glass

Ingredients

4 oz chilled butterfly pea tea (brewed double-strength)
3 oz passion fruit puree (Funkin or frozen pulp)
1.5 oz fresh lemon juice
1 oz simple syrup
4 oz sparkling water
Ice
Lemon wedges, for garnish (and color-change moment)

Instructions

Brew butterfly pea tea using double-strength (2 tea bags per cup). Chill completely.
In a shaker, combine passion fruit puree, lemon juice, and simple syrup with ice.
Shake for 10 seconds and strain evenly into two tall glasses filled with ice.
Add 2 oz sparkling water to each glass and stir gently.
Slowly pour 2 oz chilled butterfly pea tea over the back of a spoon into each glass — it will layer on top.
Serve with a lemon wedge on the side so the guest can squeeze and watch the color shift from blue to purple.
