Ingredients

2 oz prickly pear syrup
1 oz fresh lime juice
4 fresh sage leaves
4 oz chilled sparkling mineral water
1 tsp agave nectar
Ice cubes
Garnish: Lime wheel and a fresh sage sprig
Optional: Tajin or sea salt for the rim

Instructions

1. If desired, rim a highball glass with lime juice and dip into Tajin or sea salt.
2. In a cocktail shaker, gently muddle the fresh sage leaves with the agave nectar and lime juice to release the herbal oils.
3. Add the prickly pear syrup and a handful of ice to the shaker.
4. Shake briefly for about 10 seconds to chill the mixture without over-diluting.
5. Strain the mixture into the prepared glass filled with fresh ice.
6. Top with chilled sparkling mineral water and stir gently to combine the layers.
7. Garnish with a lime wheel and a fresh sprig of sage for an aromatic finish.
