Jasmine Yuzu Sparkler

Ingredients
- 4 oz brewed jasmine green tea (chilled)
- 0.75 oz yuzu juice
- 0.5 oz honey syrup (1:1 honey and water)
- 3 oz sparkling water
- 4 fresh mint leaves
- 1 cup ice cubes
- Fresh mint sprig for garnish
Instructions
- 1. Prepare the honey syrup by whisking equal parts honey and hot water until fully combined, then allow it to cool completely.
- 2. Place the fresh mint leaves in the bottom of a sturdy glass and lightly press them with a muddler to release the aromatic oils without tearing the leaves.
- 3. Pour the chilled jasmine green tea, yuzu juice, and honey syrup into the glass over the muddled mint.
- 4. Stir the mixture gently for ten seconds to integrate the flavors and chill the base.
- 5. Fill the glass to the brim with fresh ice cubes to ensure the drink remains cold throughout service.
- 6. Top the glass with sparkling water and give it one final, gentle stir from the bottom to lift the tea and citrus.
- 7. Garnish with a fresh mint sprig and serve immediately to maintain maximum carbonation.
