The Rocky Mountain High
A deep purple lavender-blueberry mocktail with a lavender sugar rim, inspired by the Colorado Rockies.

Ingredients
- 2 oz blueberry juice
- 1.5 oz lavender simple syrup (see tips)
- 0.5 oz fresh lemon juice
- 1 oz sparkling water
- Lavender sugar, for rim
- Ice
- Fresh blueberries and a lavender sprig, for garnish
Instructions
- Make lavender simple syrup: bring 1 cup water and 1 cup sugar to a simmer. Add 2 tablespoons dried culinary lavender. Steep 15 minutes, then strain and cool.
- Make lavender sugar: pulse 2 tablespoons white sugar with 1 teaspoon dried lavender in a spice grinder.
- Rim a wine glass with lavender sugar: wet the rim with lemon juice and dip into the lavender sugar.
- Fill the glass with ice.
- Combine blueberry juice, lavender simple syrup, and lemon juice. Stir well.
- Pour over ice and top with sparkling water.
- Garnish with fresh blueberries and a lavender sprig on the rim.
