Ingredients
- 2 cups blackberry puree, strained to remove seeds
- 3 cups chilled Lapsang Souchong tea, brewed to medium strength
- 3/4 cup fresh grapefruit juice
- 1/2 cup date syrup
- 1 quart chilled sparkling water
- Fresh blackberries and grapefruit wheels for garnish
- Ice for serving
Instructions
- In a large pitcher, combine the blackberry puree, chilled Lapsang Souchong tea, fresh grapefruit juice, and date syrup.
- Stir vigorously with a long spoon until the date syrup is fully integrated and the mixture is uniform.
- Taste the base and add more date syrup one tablespoon at a time if a sweeter profile is desired.
- Just before serving, gently pour in the chilled sparkling water to maintain the carbonation.
- Stir once or twice very gently to combine without losing the fizz.
- Fill individual glasses with ice and pour the mocktail over the top.
- Garnish each glass with a few fresh blackberries and a lemon wheel.
