By Larry Leo | Prep: | Servings: 8 | Difficulty: Easy
Ingredients
- 1 large English cucumber, thinly sliced, with 8 long ribbons reserved for garnish
- 2 cups chilled white grape juice
- 3/4 cup fresh lime juice
- 1/3 cup basil simple syrup
- 4 cups chilled mineral water or plain sparkling water
- 2 cups ice, plus more for serving
- 8 small basil sprigs for garnish
Instructions
- Add the cucumber slices, white grape juice, lime juice, and basil syrup to a large glass pitcher.
- Stir for 15 seconds, then chill the base for at least 10 minutes so the cucumber begins to perfume the drink.
- Taste the still base. Add one tablespoon of basil syrup at a time only if a sweeter finish is needed.
- Just before serving, add the ice and slowly pour in the chilled mineral water.
- Stir once or twice very gently to preserve the bubbles.
- Pour over fresh ice in eight glasses. Finish each serving with a cucumber ribbon, lime wheel, and basil sprig.
