By Larry Leo | Prep: | Servings: 8 | Difficulty: Medium
Ingredients
- 3 cups chilled pineapple juice
- 1/2 cup tamarind concentrate
- 1/2 cup fresh lime juice
- 1/3 cup smoked-paprika honey syrup
- 3 cups chilled mineral water
- 1 pineapple wedge and 1 charred lime wheel per serving, for garnish
- Ice for serving
Instructions
- To make the smoked-paprika honey syrup, gently warm equal parts honey and water with a small pinch of smoked paprika, then cool completely and strain if needed.
- In a large pitcher, whisk together the pineapple juice, tamarind concentrate, lime juice, and cooled smoked-paprika honey syrup.
- Taste the base. Tamarind brands differ in intensity, so add one tablespoon of water if the flavor is overly sharp.
- Chill the base until serving time.
- Add mineral water immediately before serving and stir once gently.
- Serve over ice with a pineapple wedge and a charred lime wheel.
