The Seattle Rainier
A deep teal cucumber and mint mocktail with a sea salt rim, inspired by the Seattle Mariners.

Ingredients
- 2 oz butterfly pea flower tea (brewed and cooled)
- 1.5 oz fresh cucumber juice (blend and strain)
- 0.5 oz fresh lime juice
- 0.5 oz simple syrup
- 4-5 fresh mint leaves
- 1 oz sparkling water
- Flaky sea salt, for rim
- Ice
- Cucumber wheel and mint sprig, for garnish
Instructions
- Rim a rocks glass with flaky sea salt: wet the rim with lime juice and dip into sea salt.
- In a shaker, muddle the mint leaves with simple syrup until fragrant.
- Add butterfly pea tea, cucumber juice, and lime juice to the shaker with ice.
- Shake for 10 seconds and double-strain into the prepared glass over ice.
- Top with sparkling water.
- Garnish with a cucumber wheel and a fresh mint sprig.
