Smoky Peach Tea Pitcher
Craft a sophisticated Smoky Peach Tea Pitcher with grilled peach puree, black tea, and molasses. A perfect non-alcoholic mocktail for game day.

Ingredients
- 4 large ripe peaches, halved and pitted
- 1/2 cup unsulfured molasses
- 1/2 cup water
- 4 cups strong-brewed black tea, chilled
- 1/2 cup fresh lemon juice
- 3 cups soda water, chilled
- 2 cups ice cubes
- 1 lemon, thinly sliced into wheels
- 1 fresh peach, sliced for garnish
Instructions
- Preheat a grill or cast-iron grill pan over medium-high heat.
- Place the peach halves cut-side down on the hot grill and cook for 4 to 6 minutes, until deep grill marks appear and the fruit begins to soften.
- Remove the peaches from the heat and allow them to cool slightly. Once cool enough to handle, place the grilled peaches in a blender and process until completely smooth. Set the puree aside.
- In a small saucepan, combine the molasses and water. Heat over low-medium heat, stirring constantly, until the molasses is fully dissolved into the water. Remove from heat and let the syrup cool completely.
- In a large glass pitcher, combine the grilled peach puree, the cooled molasses syrup, the chilled black tea, and the fresh lemon juice. Stir vigorously to ensure the puree is well-integrated.
- Just before serving, gently pour the chilled soda water into the pitcher and give it a light stir to combine without losing the carbonation.
- Fill individual glasses with ice and pour the mixture over. Garnish each glass with a lemon wheel and a fresh peach slice.
