Uncle Sam's Watermelon Cooler
Fresh watermelon juice mocktail with mint and lime for the 4th of July. Deep pink-red color, incredibly refreshing. Ready in 10 minutes.

Ingredients
- 3 cups fresh watermelon, cubed and seeded
- 1 oz fresh lime juice
- 0.5 oz simple syrup (or more to taste)
- 6 fresh mint leaves
- 4 oz sparkling water
- Ice cubes
- Watermelon wedge, blueberries, and mint for garnish
Instructions
- Blend the watermelon cubes until completely smooth. Strain through a fine mesh strainer to remove pulp — you should have about 1.5 cups of deep pink-red juice.
- In a shaker, muddle the mint leaves gently with the simple syrup.
- Add the watermelon juice and lime juice to the shaker with ice. Shake for 10 seconds.
- Strain into two glasses filled with ice.
- Top each glass with 2 oz of sparkling water and stir gently.
- Garnish with a small watermelon wedge on the rim, a few blueberries on a pick, and a fresh mint sprig.
- Serve immediately — fresh watermelon juice oxidizes quickly and is best within 30 minutes.
