Peach Black Tea Highball
A refreshing peach black tea highball mocktail with lemon, basil, and sparkling water. Easy non-alcoholic drink for summer gatherings and brunch.

Ingredients
- 4 oz concentrated black tea (chilled)
- 1.5 oz peach nectar
- 0.5 oz fresh lemon juice
- 0.25 oz simple syrup (optional)
- 3 oz sparkling water
- 2 fresh basil leaves
- 1 fresh peach slice (optional garnish)
Instructions
- 1. Brew a strong black tea concentrate by steeping two tea bags in 4 ounces of hot water for 5 minutes, then chill completely.
- 2. In a tall highball glass, lightly slap the basil leaves between your palms to release their aromatic oils and drop them into the bottom.
- 3. Pour in the chilled black tea concentrate, peach nectar, and fresh lemon juice.
- 4. Stir gently with a long spoon to integrate the ingredients without bruising the basil.
- 5. Fill the glass to the brim with large ice cubes to ensure the drink stays cold and minimizes dilution.
- 6. Top with chilled sparkling water and stir once more very briefly to lift the flavors.
- 7. Garnish with a fresh peach slice on the rim if desired and serve immediately.
