Pumpkin Spice Espresso Martini Mocktail
Make a zero-proof Pumpkin Spice Espresso Martini Mocktail with chilled espresso, maple, spiced soy-milk foam, and cocoa. No alcohol or liqueur.

Ingredients
- 2 oz freshly brewed espresso, chilled completely
- 1/2 oz pumpkin spice syrup
- 1/4 oz pure maple syrup
- 1 1/2 oz chilled barista-style soy milk
- 1/8 tsp vanilla bean paste
- 1/4 tsp unsweetened cocoa powder, plus 3 coffee beans for garnish
- Ice for shaking
Instructions
- Brew the espresso, then chill it completely. Hot espresso will melt the ice and weaken the finished drink.
- Add the chilled espresso, pumpkin spice syrup, maple syrup, and ice to a cocktail shaker.
- Shake hard for 15 seconds, then strain into a chilled coupe glass.
- In a small frothing cup, combine the soy milk and vanilla bean paste. Froth until lightly aerated, not stiff.
- Spoon the thin foam gently over the espresso base.
- Dust the surface lightly with cocoa powder and place three coffee beans in the center before serving.
