By Larry Leo | Prep: | Servings: 2 | Difficulty: Easy
Ingredients
- 1.5 oz Belvoir Elderflower Cordial
- 2 oz fresh lime juice
- 1 oz simple syrup
- 6 oz sparkling water (Topo Chico or Fever-Tree)
- 1/2 English cucumber, thinly sliced into ribbons
- Ice cubes
- Lime wheel and cucumber ribbon, for garnish
- Fresh mint sprig, for garnish
Instructions
- Using a vegetable peeler, peel long, thin ribbons from the cucumber. Set aside for garnish.
- In a shaker, combine the elderflower cordial, lime juice, and simple syrup.
- Add ice and shake for 10 seconds — just enough to chill without over-diluting.
- Strain into two chilled wine glasses or tall glasses filled with fresh ice.
- Top each glass with 3 oz sparkling water, pouring slowly to preserve the bubbles.
- Drape a cucumber ribbon around the inside of each glass.
- Garnish with a lime wheel on the rim and a fresh mint sprig.
- Serve immediately — the elderflower aroma is most vibrant when cold and freshly poured.
